Ukadiche Modak
“Modak” is very favourite sweet dish of Bhagwan Ganesha’s. And Modaks made by Hindu Homes during the first day of ganesh festival that is on Ganesh Chaturthi. But in Maharashtra- Kokan Ukadiche Modak is very Popular Sweet Dish in Ganesh Festival.

Let’s begin the Recipe Of Ukadiche Modak
There are three steps
Make the Sweet Stuffing
Make the Outer Rice Dough
Shape the Modak(with or without mould)
Make The Sweet Stuffing
Firs grate 1 cup coconut and 1 cup jaggery and keep aside. (If you do not have fresh coconut then use desscicated coconut by making their fine shreds)
Take a 2 Tbsp ghee in a hot pan. Add 2 tsp poppy seeds and saute then until poppy seed starts cracking.
Then add 1 cup grated coconut and 1 cup jaggery.
Mix well this step is important because we have cook them on a low flame. (Strictly on low flame) Jaggery will start melting and stir.
After that add 1 tsp cardamom powder because it taste awesome.
We have to cook this mixture until the jaggery moisture dry out means for 6-7 minutes. Don’t Overcook the jaggery gets harden.
After switch off the flame.
Let the mixture to be completly cool down.
Make the Outer Rice Dough
In a big pan add 1.5 cups water or milk, 1/2 tsp oil and salt as per taste. Then switch on the gas.
Allow this water to boil.
Add 1 cup rice flour. (TIP- Rice flour should be very fresh or if it’s from packet then it should be within it’s shelf life).
Quickly stir and mix it very properly rice flour and water it’s very important step we have to be very quick in action.
Once it mixed switch off the flame and remove pan from the gas and cover the pan with lid for atleast 5-7 minutes.
Now take all the dough in big plate and gather the dough together and try to knead it still it’s hot. Add some water to your fingers, palms and try to knead fast as you can.
Make very soft and smooth dough without lumps of rice flour.
If you feel your dough getting dry add some water and knead it properly.
Make small balls of dough.
Shape the Modak With Mould
First grease the modak with oil or ghee. Then close the mould put the dough ball inside the mould and press so that space made in center should be fill. The rice dough dough will form a layer touching the sides of the mould and take the shape of mould.
Place the sweet stuffing in the center and cover that bottom with another small piece of rice flour dough. Press that mould for smoothen the modak.
Open the mould and remove modak gently from the modak. Repeat this process for remaining modaks. Cover modak with cotton napkin so modak does not dry out.
Shape the Modak Without Mould
Take a ball and flatten it with your fingers on your palms, to an round shape like puri but to an medium thick.
But while doing this process edges should be slightly thin and center should be thick.
Press the edges as shown in the figure and then add sweet stuffing in that center part.
Bring all that edges together and remove extra portion of the dough. (This is an art it will come by practice )
Your modak is ready. Make remaining Modaks as well.
It’s Time To Steaming The Modak
Take 3 cups of water in steamer. Let the water to boil on a high flame.
First grease that steamer net place batches of modak on steamer net.
And Cover the steamer with lid and allow the modak to steam for 12-15 minutes on low-medium flame.
Once the Ukadiche Modak are steamed you can drizzle a teaspoon of ghee on them. Wow I Loved It. It’s Mouth Watering. My Favourite.
